What’s your earliest and fondest first memory of food? 

Chowder and prawn cocktail at Christmas.

Which chefs inspire you most and why? 

Thomas Keller for his constant pursuit of perfection and his respect for everything our industry is about.

What are your two favourite cookbooks and why? 

The French Laundry Cookbook by Thomas Keller, because it is all about the search for perfection.

The Kitchen Diaries by Nigel Slater. This book is great because I love the way Nigel Slater can transport you to a seasonal moment of food.

Which two ingredients could you not live without?

Yogurt and damson plums.

What is your favourite comfort food to cook at home?

Roast chicken.

If you could eat at any Michelin star restaurant in the world today, where would it be and why? 

Gaggan restaurant in Bangkok. I love the ingredients they have in Thailand and I’m fascinated with Gaggan’s creativity.

And who would you take as your guest?

My wife Sandia.

What do you look for in a good chef?

Pure love of food.

What advice would you give to chefs starting their career paths now? 

Sacrifice everything and work as hard as you can!
