How old were you when you started cooking professionally? 

15.

What’s your earliest and fondest first memory of food? 

My mum’s egg sandwiches.

Which chefs inspire you most and why?

Michel Bras, because of his constant chase for perfection.

What are your two favourite cookbooks and why? 

Le Répertoire De La Cuisine. I was given this at college and still use it now.
Ma Gastronomie by Fernand Point.

Which two ingredients could you not live without?

Salt and lemon juice.

What is your favourite comfort food to cook at home? 

Roast chicken on a Sunday.

If you could eat at any Michelin star restaurant in the world today, where would it be and why? 

Araki, London – to understand the Japanese cuisine.

And who would you take as your guest?

My eldest daughter Shannon.

What do you look for in a good chef?

Work practices, attitude and drive.

What advice would you give to chefs starting their career paths now?

Listen and learn as much as you can. The more hard work you put in, the more you get out.
