How old were you when you started cooking professionally?
So young, 22 years old.

What’s your earliest and fondest first memory of food?
Since I was little I never had problems eating – I liked everything. I remember especially the crèmes brûlées at Rte L’Escaleta when they were still hot.

Which chefs inspire you most and why?
The Roca brothers are big people, both inside and outside the kitchen.

What are your two favourite cookbooks and why?
Massimo Bottura ́s books are different and personal books. I hope to have one myself next year.

Which two ingredients could you not live without?
Salt and eggs are very important in my recipes.

What is your favourite comfort food to cook at home?
I love rice.

If you could eat at any Michelin star restaurant in the world today, where would it be and why?
My friend Ricard Camarena’s new restaurant in Valencia.

And who would you take as your guest?
My wife.

What do you look for in a good chef?
Passion and humility.

What advice would you give to chefs starting their career paths now?
That they see everything with the eyes of a child, as if it were the first time, with great humility, learning every day. I continue learning every day. They should cook with passion as if it were for their loved ones, because cooking is an act of love.
