Alex Dilling is one amazing talent, we have interviewed him and I am beyond excited for everything here and he and his team do not disappoint. I don’t think I have eaten so much foie, caviar and truffles in one sitting. Decadent and glorious in every way, I loved it all. Some knockout dishes from Alex here, being the Cornish mackerel, with pickled and raw carrots like little autumn leaves, apple and fennel jus. 

The stunning foie gras with gold leaf. Clam chowder- razor clams and cockles, caviar, parsley jelly, clam chowder velouté – holy moly this was beyond incredible and of course Alex’s signature dish of Hunter chicken, wild mushroom, cep, black truffle, chicken mousse. What an incredible experience. Alex is quite simply amazing, and a trailblazer in this industry. 

2020 Update- sadly in the pandemic this amazing restaurant closed. Alex did partake in our Chef’s Together, which you can see here
