How old were you when you started cooking professionally? 18 years old.

What’s your earliest and fondest first memory of food?

My grandparents were farmers and had a restaurant where food was served. When we visited, there was always bread with butter and Westphalian ham. I enjoyed it. In the evening I often happily listened to the noises from the kitchen and the dining room before falling asleep.

Which chefs inspire you most and why?

In the past of course Bocuse, Haeberlin and Witzigmann. Today I hope that I am the one who inspires.

What are your two favourite cookbooks and why?

I am not such a big fan of cookbooks, to be honest. Therefore I do not have that many.

Which two ingredients could you not live without?

Love and passion.

What is your favourite comfort food to cook at home?

Whatever my wife has cooked.

If you could eat at any Michelin star restaurant in the world today, where would it be and why?

I would choose one in Japan, because I’ve never been there. This question is hard to answer, because there are so many excellent restaurants around the world.

And who would you take as your guest?

My wife.

What do you look for in a good chef?

Creativity, consistency, team player, visionary.

What advice would you give to chefs starting their career paths now?

Ensure that you keep it fun at work.
