Tom was our first ever interview for mymuybueno Chefs Get Personal back in 2017, and he came to teach as a guest chef at mymuybueno Cookery School too. He is immensely talented with massively high standards; he works so hard and is a brilliant and inspiring chef. Coming to Muse was very special, as he takes you on a tour of his own childhood, with dishes and flavours that have shaped and moulded him as a person and chef in all these years. The house itself is on a mews, so the play on words of his menu and what has been his Muse and being on a mews is not lost on me. So many gorgeous dishes and he’ll be shooting for a star here easily. The langoustine with pork fat and burnt apple was my absolute favourite.
Update 2021- since this visit, Tom and Muse by Tom Aikens have been awarded a star.
